| All of our beef must meet our strict specifications & standards.
We use the finest beef cattle from mid-western lots
where the quality of the feed & feeding schedule
are strictly formulated to produce the finest Prime
beef you can buy. |

HOW & WHY WE AGE
OUR BEEF? |
| Simple! The process breaks down the fat enzymes to
enhance tenderness & flavor. We age our beef to
a specific formula developed by our executive chef
after years of experience and experimentation. Our
beef is sealed and refrigerated to retain its natural
juices & aged from 21 days to 45 days depending
on the cut. We sear our steaks over mesquite charcoal
at nearly 1700 degrees to seal in the juices and produce
the most flavor. We use thick cuts of meats to avoid
drying out during the cooking process. |
